Peanut Butter Energy Balls

I love the recipe for these energy balls because it's so easy. This one doesn't require a food processor and you can whip it up in minutes. They contain protein, healthy fat, and fibre making them a great snack for consistent energy!

Prep Time 10 minutes

Ingredients

  • 3/4 cup large flake oats
  • 1/2 cup organic peanut butter
  • 3 tbsp ground flax seed
  • 1/4 cup unsweetened shredded coconut
  • 1 tsp vanilla extract
  • 2 tbsp pure honey
  • pinch sea salt
  • 1/4 cup dark chocolate chips

Instructions

  1. Blend all ingredients together in a medium size bowl except chocolate chips. Once blended, add the chocolate chips. Form into 1 inch balls. Keep in the fridge for 3 days, or (my preference) keep in the freezer for up to 3 months.
