Ingredients
- 6 cups organic spinach
- 2 large peaches sliced
- 1 avocado diced
- 1/2 small red onion sliced very thinly
- 1/3 cup goat cheese crumbles
- 1/2 cup sliced toasted almonds
For the Dressing
- 3 tbsp balsamic vinegar
- 2 tbsp extra virgin olive oil
- 1 clove garlic minced
- 1/2 tsp dijon mustard
- salt & pepper to taste

In a small bowl, whisk together the balsamic, olive oil, minced garlic, dijon, and salt & pepper

In a large bowl, add the spinach. Drizzle with dressing and toss to combine. Add the peach slices, diced avocado, red onion, goat cheese crumbles, and sliced toasted almonds. (To toast almonds, put in a small pan over medium heat and stir constantly until they turn light brown - approximately 5 mins. Then cool). Toss the salad again very gently. Enjoy!
