The recipe for these yummy balls originally came from the Grain Changer. They are a delicious snack that are free of any grains, therefore Paleo friendly. 🙂
Ingredients
- 1 1/4 cup unsweetened finely shredded coconut
- 1 tbsp almond flour
- 2 1/2 tbsp cacao powder
- 1/4 tsp sea salt
- 1/4 cup coconut oil, melted
- 2 tbsp pure maple syrup
- 1/2 tsp pure vanilla extract
Instructions
-
In a medium mixing bowl, combine the shredded coconut, almond flour, cacao powder and salt, mixing well.
-
In a separate bowl, whisk together the melted coconut oil, pure maple syrup, and vanilla.
-
Add wet ingredients to the dry ingredients, stirring until the mixture is uniform. At this point you may need to put it into the fridge for 5 - 10 mins so the coconut can firm up enough for you to be able to work with the dough.
-
Form the dough into 1 inch balls. Roll in the reserved coconut.
-
Refrigerate 30 mins or freeze for 15 mins before eating. Store for up to a week in the fridge, or keep in the freezer!
