Dark Chocolate Coconut Bites

The recipe for these yummy balls originally came from the Grain Changer.  They are a delicious snack that are free of any grains, therefore Paleo friendly.  🙂

Prep Time 20 minutes
Servings 18 balls

Ingredients

  • 1 1/4 cup unsweetened finely shredded coconut
  • 1 tbsp almond flour
  • 2 1/2 tbsp cacao powder
  • 1/4 tsp sea salt
  • 1/4 cup coconut oil, melted
  • 2 tbsp pure maple syrup
  • 1/2 tsp pure vanilla extract

Instructions

  1. In a medium mixing bowl, combine the shredded coconut, almond flour, cacao powder and salt, mixing well.

  2. In a separate bowl, whisk together the melted coconut oil, pure maple syrup, and vanilla.

  3. Add wet ingredients to the dry ingredients, stirring until the mixture is uniform.  At this point you may need to put it into the fridge for 5 - 10 mins so the coconut can firm up enough for you to be able to work with the dough.

  4. Form the dough into 1 inch balls.  Roll in the reserved coconut.  

  5. Refrigerate 30 mins or freeze for 15 mins before eating. Store for up to a week in the fridge, or keep in the freezer!
