Blueberry Banana Breakfast Muffins

These Blueberry Banana Breakfast Muffins are delicious! The smell while they're cooking is heavenly! With oats and cinnamon, blueberries and bananas, these muffins taste like a warm bowl of oatmeal baked into a muffin!

Cook Time 25 minutes
Servings 12 muffins

Ingredients

  • 2 tsp coconut oil
  • 1 cup rolled oats
  • 1/2 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/8 tsp sea salt
  • 3/4 cup almond milk
  • 1 large egg
  • 1/4 cup honey
  • 1 tsp vanilla extract
  • 2 medium ripe bananas, mashed
  • 1 cup blueberries

Instructions

  1. Preheat oven to 375F. Grease 12 cup muffin tin with coconut oil using paper towel.

  2. Using a food processor, grind 1/2 of the rolled oats into a flour. In a large bowl, mix rolled oats and oat flour, cinnamon, baking powder, sea salt, almond milk, egg, honey and vanilla extract until combined.

  3. Fold in mashed bananas and blueberries. Using a 1/4 cup measuring cup, to pour into muffin tin cups. Bake for 25 mins.
