This is such an easy and delicious soup that can be whipped up in just a few minutes with your high speed blender / Vitamix / Blendtec!

  • 2 cups cold water
  • 3 whole tomatoes (core removed)
  • 1 carrot
  • 2 celery stalks including leaves
  • 1 green onion
  • 1 garlic clove
  • 1/2 cup cabbage
  • 1/2 bell pepper
  • 1/4 cup basil (packed well)
  • 1 cube vegetable stock
  • 1/4 - 1/2 tsp crushed chilli peppers
  • 1/2 cup cashews
  • sea salt & pepper to taste


  1. Roughly cut vegetables into slightly smaller pieces for your high speed blender / Vitamix / Blendtec.  Pulse a few times and then blend for 1 min to fully combine.  Continue blending for 4 mins to heat, or transfer to a pot on the stove to heat for a few minutes.  Enjoy!
