Raw Carrot Cake Balls

Adapted from Joy McCarthy. These healthy little treats are delicious! Just a delicious mix of flavours and spices! You get protein (hemp hearts and walnuts), healthy fat (walnuts and hemp hearts), and fibre rich carbohydrates (carrots), healthy sweetness from dates and a bit of honey, along with a delicious spice blend! They're a fall favourite of mine, but can be enjoyed anytime!!

Prep Time 9 minutes

Ingredients

  • 1/2 cup plus 1/4 cup unsweetened shredded coconut
  • 6 medjool dates, pitted
  • 3/4 cup walnuts
  • 1/2 cup grated carrots
  • 1/4 cup hemp hearts
  • 1/4 cup (or less) honey
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ground cloves

Instructions

  1. Reserve the 1/4 cup of unsweetened shredded coconut for rolling balls in after.

  2. Place the 1/2 cup of unsweetened shredded coconut and all other ingredients into a food processor. If you don't want to grate the carrots first, you can put a carrot into the food processor to grate it for you. (Just check that it is 1/2 once grated).

  3. Once all ingredients are mixed together and are sticky, remove the blade, and then form the mixture into one inch balls.

  4. Roll the balls into a bowl with the 1/4 cup of coconut.

  5. Place in the fridge (for one week) or freezer (for up to 3 months)
