These bars are delicious! Especially if you like the taste of chocolate and peanut butter together!! And who doesn't?? This recipe originally came from Chocolate Covered Katie, but I liked it better when I used less oatmeal (hers had 2 3/4 cups). You can also add more chocolate chips if you want the chocolate layer to be thicker. Definitely give this recipe a try!
Ingredients
- 1 3/4 cup organic oats
- 1/2 tsp sea salt
- 1/4 cup pure maple syrup
- 1/4 cup organic peanut butter
- 1 tbsp water
- 1 tsp pure vanilla extract
- 3/4 cup dark chocolate chips
- 1/3 cup organic peanut butter
Instructions
-
In a medium bowl, stir together the maple syrup, 1/4 cup peanut butter, water, and vanilla, until smooth.
-
Stir in the oats and salt. Transfer approximately 2/3 of the mixture into a parchment lined 8 x 8 pan (or 9 x 4 loaf pan if you want them really thick!)
-
Use a small sheet of parchment paper to press it down evenly into the pan.
-
In a pot or double broiler on the stove (or bowl and microwave) carefully melt the chocolate chips and remaining 1/3 cup peanut butter, stirring until smooth. Pour this evenly on top of the oatmeal mixture in the pan.
-
Sprinkle the remaining oat crumbles on top of the chocolate layer and freeze until firm enough to cut into squares. Keep in the fridge for a week, or freezer longer!
