These delicious blueberry hemp muffins are gluten, dairy and refined sugar free. Hemp hearts provide some protein and healthy fat, and blueberries provide fibre, vitamins C and K, and are rich in antioxidants. Recipe was adapted from Joy McCarthy.
Ingredients
- 1 cup brown rice flour
- 1/2 cup oat flour
- 1/3 cup hemp hearts
- 1 tsp baking powder
- 1 tsp baking soda
- 1 1/2 tsp cinnamon
- 1 1/2 cups blueberries
- 2 eggs, whisked
- 1/2 cup maple syrup
- 3 tbsp coconut oil, melted
Instructions

Preheat oven to 350F

In a large bowl, mix dry ingredients - brown rice flour, oat flour, baking powder, baking soda, and cinnamon.

In a small bowl, whisk wet ingredients - eggs, maple syrup, and coconut oil

Add wet ingredients into dry ingredients bowl and mix well.

Add blueberries and mix.

Divide into 12 muffin cups

Bake 20-22 minutes until golden and toothpick comes out clean.

Keep in the fridge for 5 days or freezer for up to 3 months.
