Blueberry Hemp Muffins

For almost 30 years Karen battled severe IBS, & anxiety.

Forced to re-evaluate and take her health into her own hands, she started looking into alternative methods to help her heal where the traditional medical approach had failed. 

Karen’s health, and consequently her life, entirely shifted and she felt compelled to help as many women as possible to feel their absolute best!  

These delicious blueberry hemp muffins are gluten, dairy and refined sugar free. Hemp hearts provide some protein and healthy fat, and blueberries provide fibre, vitamins C and K, and are rich in antioxidants. Recipe was adapted from Joy McCarthy.

Prep Time 8 minutes
Cook Time 20 minutes

Ingredients

  • 1 cup brown rice flour
  • 1/2 cup oat flour
  • 1/3 cup hemp hearts
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 1/2 tsp cinnamon
  • 1 1/2 cups blueberries
  • 2 eggs, whisked
  • 1/2 cup maple syrup
  • 3 tbsp coconut oil, melted

Instructions

  1. Preheat oven to 350F

  2. In a large bowl, mix dry ingredients - brown rice flour, oat flour, baking powder, baking soda, and cinnamon.

  3. In a small bowl, whisk wet ingredients - eggs, maple syrup, and coconut oil

  4. Add wet ingredients into dry ingredients bowl and mix well.

  5. Add blueberries and mix.

  6. Divide into 12 muffin cups

  7. Bake 20-22 minutes until golden and toothpick comes out clean.

  8. Keep in the fridge for 5 days or freezer for up to 3 months.
