These Blueberry Banana Breakfast Muffins are delicious! The smell while they're cooking is heavenly! With oats and cinnamon, blueberries and bananas, these muffins taste like a warm bowl of oatmeal baked into a muffin!
Preheat oven to 375F. Grease 12 cup muffin tin with coconut oil using paper towel.
Using a food processor, grind 1/2 of the rolled oats into a flour. In a large bowl, mix rolled oats and oat flour, cinnamon, baking powder, sea salt, almond milk, egg, honey and vanilla extract until combined.
Fold in mashed bananas and blueberries. Using a 1/4 cup measuring cup, to pour into muffin tin cups. Bake for 25 mins.
