Oatmeal Peanut Chocolate Fudge Bars, Karen Porter Holistic Food Coach

These bars are delicious!  Especially if you like the taste of chocolate and peanut butter together!!  And who doesn't??  This recipe originally came from Chocolate Covered Katie, but I liked it better when I used less oatmeal (hers had 2 3/4 cups).  You can also add more chocolate chips if you want the chocolate layer to be thicker.  Definitely give this recipe a try!

Ingredients

  • 1 3/4 cup organic oats
  • 1/2 tsp sea salt
  • 1/4 cup pure maple syrup
  • 1/4 cup organic peanut butter
  • 1 tbsp water
  • 1 tsp pure vanilla extract
  • 3/4 cup dark chocolate chips
  • 1/3 cup organic peanut butter

Instructions

  1. In a medium bowl, stir together the maple syrup, 1/4 cup peanut butter, water, and vanilla, until smooth. 

  2. Stir in the oats and salt.  Transfer approximately 2/3 of the mixture into a parchment lined 8 x 8 pan (or 9 x 4 loaf pan if you want them really thick!) 

  3. Use a small sheet of parchment paper to press it down evenly into the pan.

  4. In a pot or double broiler on the stove (or bowl and microwave) carefully melt the chocolate chips and remaining 1/3 cup peanut butter, stirring until smooth.  Pour this evenly on top of the oatmeal mixture in the pan.  

  5. Sprinkle the remaining oat crumbles on top of the chocolate layer and freeze until firm enough to cut into squares.  Keep in the fridge for a week, or freezer longer!
