Melt the coconut oil over medium heat.
Add melted coconut oil, avocado, zest of lime, juice of lime, and honey to the food processor and blend until completely smooth.
Transfer to a bowl and place in the freezer for about an hour until solid.
Using a tablespoon to help, form the mixture into balls. They won't be perfectly round. That's okay.
Put the shredded coconut into a bowl and coat the balls with the coconut.
Place the balls back into the freezer for an hour or so. Keep the in the freezer. You can put them in the fridge 15 minutes before you want to eat them, or eat them right out of the freezer!
